Freezer Soup

A great way to eat local in the off season is to find creative ways to preserve fresh foods. Soups are a wonderful vehicle for vegetables, but after making a big pot of fresh soup, the heat causes brightly colored vegetables to ultimately lose their vibrancy and turn unappealing shades of brown. Broccoli, zucchini and greens are especially prone to this.

The solution? Never let the soup heat up! Assemble a soup from cold ingredients and pop it in the freezer. Retrieve on a cold, bitter winter night when the wind is howling and the sleet is coming down. The vegetables will stay crisp, the colors bright and the flavor as fresh as the day it was harvested.

First, I laid out 6 Gladware containers and added sauteed onions. Then, I cooked carrots for about 3 minutes, shocked them in ice water and added to the containers.
